“Galician Style Octopus with potatoes”

Ingredients: octopus, potatoes, sea salt (Maldon Salt flakes, if available), extra-virgin olive oil, smoked sweet paprika, bay leaves for octopus boiling

1.Defrost the octopus and clean it thoroughly

2.Bring water to boil in a large pot with 2-3 bay leaves, and when boiling, simmer octopus, dipping in the tentacles first 2-3 times then simmer in completely

3.For 1-2LB size octopus, boil for 25-30 minutes until the texture is tender but not chewy

4.In the same pot, place potatoes when water comes to a boil and cook till ready

5.Slice potatoes and octopus in thin slices and dress with olive oil, salt and smoked paprika. Ready to enjoy~!
